Hello friends! This week I have another really yummy meal prep recipe. For a couple weeks I was on a big omelette kick for breakfast - with sautéed bell peppers, onions, cheddar cheese and chicken sausage so I decided to try turning my current breakfast rotation into some egg bites and they truly did not disappoint. Each serving has 29g of protein and they are honestly the best egg bites I have ever made. I hope you enjoy this recipe and if you have any questions leave them in the comments!

air fryer (optional - for reheating)

omelette egg bites
makes 4 servings | 3 egg bites per serving

all you need is ⬇️
• 1 teaspoon extra-virgin olive oil
• 1 green bell pepper, diced
• ½ yellow onion, diced
• salt, to taste
• 1 cup egg whites
• 2 large eggs
• ½ cup whole-milk cottage cheese
• 1 teaspoon salsa
• Pinch of seasoned salt
• 12 chicken sausages, diced (Jones brand)
• 3 ounces shredded cheddar cheese

Preheat the oven to 375°F. Heat the oil in a medium size pan over medium high heat. Add the bell pepper and onion, season generously with salt, and sauté for about 10 minutes until softened and completely cooked down.
In a small blender combine the egg whites, eggs, cottage cheese, salsa, and a generous pinch of seasoned salt. Blend until smooth.
Grease a 12-cup muffin tin. Evenly distribute half of the shredded cheddar cheese into the bottom of each cup. Add one diced chicken sausages and 1 tablespoon of the sautéed bell pepper and onion mixture into each cup.
Pour the egg mixture into each muffin cup, filling them about ¾ of the way. Sprinkle the remaining shredded cheddar cheese on top.
Bake for 27-30 minutes, or until set and lightly golden.
Remove egg bites with a small silicone spatula.
reheating instructions : microwave for 1 minute or until warmed through OR air fry on 350º for 8-10 minutes
