This week, I’m showing you my favorite way to cook chicken lately. I’ve been using this exact technique with chicken thighs, legs, and even a whole chicken. The method is simple: I season the chicken, then cover it with foil for most of the cooking time. This creates lots of steam, which keeps the meat incredibly juicy and tender while it roasts. It also creates tons drippings at the bottom of the pan which might be the best part. For seasoning, I have been loving this cowboy butter seasoning blend hence the recipe title! But honestly, you can use any of your favorite seasonings you have on hand, and it will still turn out great. If you have any questions, leave them in the comments!

9x13 baking dish
unbleached parchment paper
large spoon
foil

cowboy butter seasoning I used
cowboy butter chicken legs
serves : 4-5
all you need is ⬇️
4-5 chicken quarters (can sub for just bone in thighs/legs)
about 1 tablspoon extra-virgin olive oil
cowboy butter seasoning
ranch seasoning blend
how to ⬇️
Preheat oven to 425°F. Line a 9x13 baking dish with parchment paper.
Coat both sides of the chicken quarters with oil and generously season with cowboy butter seasoning, and lightly season with ranch seasoning.
Place chicken in the baking dish, cover tightly with foil, and bake for 1 hour.
Uncover, baste the chicken with its juices using a large spoon, and season once more with the cowboy butter.
Return to the oven uncovered and roast for additional 25-30 minutes or until the skin is golden brown and crispy.
Serve with drippings from the pan.
