This is a recipe I have been making for the longest time. When I started the keto diet a long time ago this was a really popular recipe that is typically made with ground pork but I love swapping it out for ground beef and using coconut aminos instead of the traditional soy sauce. This a go to meal prep recipe for me because it tastes just as good the next day, requires zero veggie chopping and is easy to make a huge batch. EGG ROLL IN A BOWL

Ingredients
1 pound ground beef
16 ounces bagged coleslaw mix
2 garlic cloves
3 minced green onions, whites separated
1/3 cup coconut aminos
1 teaspoon sesame oil
avocado slices
everything bagel seasoning or sesame seeds
In a large skillet over medium-high heat, add the ground beef. Cook and break it up with a spatula, until fully browned.
Once the beef is browned, add the coleslaw mix directly to the skillet. Cover the skillet and let the coleslaw steam for about 5 minutes, or until it begins to soften.
Remove the cover and mix the coleslaw thoroughly with the beef. Add the minced garlic and sliced green onions (whites only) to the skillet. Stir to combine and cook for an additional 2-3 minutes.
Pour in the coconut aminos and sesame oil, stirring to coat the beef and coleslaw mixture evenly.
Remove the skillet from the heat. Season with salt and pepper to taste.
Serve egg roll in a bowl topped with sliced avocado, sesame seeds or everything but the bagel seasoning, and the greens of the green onions.
Optional: add garlic chili oil or sriracha to add some heat

Can I use a different type of meat?
Yes, you can substitute the ground beef with ground pork, turkey or chicken.
What can I use instead of coconut aminos?
You can use soy sauce or tamari (for gluten-free) as a substitute for coconut aminos. Soy sauce is saltier, so you may want to use a bit less.
Can I make this recipe ahead of time?
Yes, this recipe is great for meal prep. Store it in an airtight container in the refrigerator for up to 4 days. Just reheat in the microwave or on the stovetop before serving again.
How should I serve this dish?
This dish can be served on its own or over a bed of cauliflower rice or regular rice. I have also thrown a fried egg on top!
Can I use fresh cabbage instead of coleslaw mix?
Yes! Thinly slice the cabbage before adding it to the skillet and adjust cooking time if needed. It may take a little longer to soften up then the Cole slaw mix.
